Chocolate-Avocado Pudding

{Yields: 1-2}

Ingredients:

2 avocados, pitted and peeled
1 cup pure maple syrup
¼ cup raw cacao
2 Tbsp coconut oil
pinch Celtic sea salt
Optional toppings: cacao nibs, fresh berries

Directions :

Place all ingredients in a high-speed blender and blend until smooth.

*This can be made in advance and stored in an airtight container in the refrigerator up to 3 days.

Root Veg Muffins

{Yield: 36 mini or 12 medium muffins}

Ingredients:

2 cups gluten free flour
2 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/2 tsp sea salt
1/2 tsp nutmeg
1/4 tsp ground cloves
1/4 cup melted coconut oil
1 cup + 2 Tbsp pure maple syrup
1/2 cup plant milk
2 Tbsp orange juice
2 tsp apple cider vinegar
1/2 tsp pure vanilla extract
2 cups grated veg (carrots, sweet potato, beet)
1/2 cups walnuts, toasted and chopped

Directions :

Preheat the oven to 350 degrees. Oil baking dish of choice.

Combine the flours, baking powder, baking soda, cinnamon, salt, nutmeg and cloves in a large bowl. Stir with a whisk to combine.

In a separate large bowl, whisk the oil, maple, milk, oj, vinegar, and vanilla extract until well blended.

Pour the wet mixture into the dry mixture and stir to combine. Stir in grated veg.

Pour batter into baking dish and smooth top with spatula. Bake for about 10-15 minutes until the top of the cake is golden and a toothpick inserted in the middle comes out clean. Cool pan on a wire rack.
